This is an excellent appetizer, and also a good topping for sushi. The delicate salty taste of salmon roe is preserved by marinating in our dashi jiru sauce.

Put all the Recipe's condiments into a saucepan and mix well.
Bring it to a boil over high flame.
As soon as it boils, turn down the flame to medium for 30 seconds.
Then turn off the fire.
Remove pan from the stove. Leave sauce until cool. To speed cooling, you can float the saucepan in a large bowl of ice water. Cover and refrigerate.
Put salmon roe into chilled dashi jiru sauce.
Marinate in the refrigerator overnight.
Remove roe from the dashu jiru sauce. Traditionally, this is served in a small bowl and eaten with tiny spoon.
   

Amounts of ingredients are given as ratios.
When you store the salmon roe in the refrigerator, keep it in the dashi jiru sauce.
After the salmon roe is added to the dashi jiru sauce, you can store it in the freezer for one month, depending on the temperature of the freezer.
